Two Summer Recipes Using Vanilla Bean Honey
There’s something about vanilla bean infused honey that makes everything taste like summer. Fragrant, sweet and just a touch indulgent, it’s the sort of flavour that adds richness to even the simplest drinks. If you’re looking to sweeten up your summer brewing, we’ve got two easy recipes to try at home. But first, let’s make the base.
How to Make Vanilla Bean Infused Honey
You’ll need:
- Around 450ml good-quality mild honey

2–3 vanilla bean pods
There are two ways to make your infused honey, depending on how soon you need it and how strong you’d like the flavour.
Cold Method
This is the slow and simple way to make vanilla honey without any heat.
- Mix: Slice the vanilla pods in half lengthwise. Run the back of a knife against the cut side to scrape out the seeds. Transfer the seeds to a clean jar. Cut the scraped pods in half again and add them to the jar too. Pour 1 cup of honey over the top.
- Steep: Seal the jar and let it sit at room temperature for at least a week, ideally longer.

Taste and strain: Once you’re happy with the flavour, you can remove the pods or leave them in to keep steeping.
Hot Method
This method is quicker and creates a deeper flavour in less time.
- Mix: Slice the vanilla pods in half lengthwise and scrape out the seeds. Add both the seeds and the pods to a small saucepan with 450 ml of honey.
- Warm and steep: Heat over the lowest heat setting, stirring often to avoid boiling. The goal is to gently warm and allow the flavour to infuse, but not overheat. Let it warm for 10 to 15 minutes.

Cool and store: Once it reaches your desired flavour strength, pour the honey into a clean jar. You can remove the pods or keep them in to continue infusing.
Recipe 1: Cold Brew with Vanilla Honey Foam
This one is all about contrast. Bold, dark cold brew topped with cool, creamy foam sweetened with vanilla bean honey. Perfect for slow mornings, sunny afternoons or when you’re feeling just a little fancy. To make cold brew foam you can use any milk frother with a cold foam setting or a handheld frother.
You’ll need:
- Cold brew (we recommend steeping longer for a richer flavour) For an intro into cold brew basics read this blog post.
- Milk (dairy or your favourite alternative) We have found that oat froths the best out of the non-dairy options
- 14ml (or to taste) of vanilla bean infused honey
- A milk frother with a cold foam setting, or a handheld frother

A glass and some ice
To make it:
Fill your glass about 80% full with cold brew over ice.
- Add milk to your frother and select the cold foam setting. Or using a handheld frother mix the two ingredients
- Once a dense foam has formed, gently spoon over your cold brew.

Sip and enjoy.
Recipe 2: Iced Vanilla Honey Latte
A summer twist on the classic iced latte. The warmth of the espresso melts the honey for a silky, smooth infusion.
You’ll need:
- 1-2 Halo Coffee capsules (your favourite blend)
- 7–14ml vanilla bean infused honey
- Milk of choice

Ice
To make it:
- Add the honey to the bottom of your glass.
- Pull shots of espresso using your Opal machine directly into the glass.
- Add ice and top with milk.

Give it one final stir, then enjoy.
