The Tradition

In the last 100 years gas & electricity have taken over from wood fired coffee roasting in order to speed up the process. A decision made to reduce cost, not to enhance flavour.

Our coffee gets its unique flavour because every blend is roasted using a wood fired kiln fueled by reclaimed beech wood in Trieste, Italy. This traditional process results in coffee that is lower in acidity and higher in body allowing us to retain more flavour.

Coffee is in our blood. Our roaster Alessandro’s grandfather was a 19th century coffee pioneer who worked alongside Francesco Illy & Luigi Bezzera in creating and then perfecting the espresso.

4 generations later that same pursuit of perfection drives the delicious flavour in every Halo.
